Homemade French fries are an all time favorite. The fries in this recipe are easy to make and always turn out well. I serve them with a mayo dipping sauce. You can, however, serve them with just about any sauce or just plain ketchup. We have a recipe for homemade burgers which really goes nicely with these fries.
We do our French fries a bit differently, so we have a few cooking tips. First, russet or Idaho potatoes are the best to use. If you can’t find them, try to use a denser, drier potato. The objective is to get as much of the starch off the potatoes as possible. To achieve this, I usually rinse the fries in cold water 2 or 3 times. The first rinse will render murky, white water. The water should come clean with the second or third rinse.
I place my fries into a pot of water that has a rolling boil for 5 minutes. This begins the cook. After that, I allow them to cool for 5 to 10 minutes – just so I can handle them. Then, I put them in a zip lock bag and place them in the freezer for an hour. This allows them to rest and stops the cook. You want the potatoes cold but not frozen. You can freeze them and use them at a later date, however. They just take longer to fry. After that, I place them between 2 pieces of paper towel and pat them dry.
You need to get your oil up to about 375 degrees. I use a meat thermometer, and it usually does the job. If you have a deep fryer, then you are off to the races. Medium to medium high heat on a gas burner gets it close, as well. It takes about 5 minutes for my fries to become golden brown. Depending on how brown you want them, you can be the judge.

- 1/4 tsp of garlic crushed or power
- 2 tsp of Dijon Mustard

- Peel the potatoes. Lay them on the edge which is the flattest, and cut them into sections about 1/2 to 3/4’s of an inch thick. Cut each section into fries.
- Place the fries into a bowl of cold water and rinse them. I usually do this a couple of times because you want to get all of the starch off.
- Place them in a zip lock bag, and put them in the freezer for about an hour.
- After an hour, place the French fries on a paper towel or cloth, and pat them dry.
- Pour about 2 inches of oil into a pot and heat it to 375 degrees. Place the fries in and fry them, in batches, for about five minutes, or until they are golden brown. Place them on a plate, lined with a paper towel, to drain the excess grease off.
- To make the sauce, simply combine all of the ingredients, except for the parsley, in a bowl and mix them together. Sprinkle the parsley over the top.
- Serve the homemade French fries with the sauce and enjoy.
