Raisin spiced cookies are delicious. Made with a unique combination of spices, these tasty little treats have a distinctive taste which is out of this world. I first encountered these cookies many years ago while boarding with some friends. Years later, I was able to track down my friend and get the recipe.
There are a few tips to baking the cookies. First, boil the raisins to the point where there is about 3 tablespoons of water left. It the water completely boils out, the mixture will be too dry. Try to use a fairly good quality raisin in the recipe, as the raisin is on of the main stars of the show. If you don’t have ground cloves, you can leave them out. They do add a rather distinctive taste, however. All ovens vary, but 15 minutes at 375 should suffice. These are a very soft, just about gooey, cookie. If you want them a little harder, you can leave them in the oven slightly longer. Lastly, make sure you leave the raisin spiced cooked on a wire rack to dry completely as they have to set.

- 1 cup of brown sugar
- 1/2 cup of white granulated sugar
- 1 egg
- 1/2 tsp of salt
- 1/4 tsp of ground cloves

- 1/2 tsp of allspice,
- 1/2 tsp of baking soda
- 1/2 tsp of baking powder
- 1 3/4 cups of all purpose flour

- Pour the water into a small pot and bring it to a boil. Add the raisins in and allow them to boil for 8 to 10 minutes. You want about 3 tbsp of the water (raisin extract) remaining. Set it aside and let it cool completely.
- In a mixing bowl, add the brown sugar, white sugar, and the egg. Using a spatula, cream them together.
- In a separate bowl, add the salt, cloves, cinnamon, allspice, baking soda, and baking powder. Whisk until everything is well combined.
- Add a little bit of the flour mixture to the sugar mixture followed by a few of the undrained raisins. Mix until combined. Do this about 5 or 6 times until you have a smooth cookie dough.
- Line a baking try with parchment paper or spray it with baking spray. Using an ice cream scoop or tablespoon, scoop up a couple of tablespoons of the dough and place it on the cookie tray. You want about 3 inch spaces between the cookies.
- Place the cookies into a 375 degree F preheated oven for 15 minutes.
- Remove the cookies and allow them to cool completely.
- Serve and enjoy your jumbo spiced cookies.
