Spaghetti Bolognese

Spaghetti bolognese is an Italian pasta dish which became one of their specialties. It is made with bolognese sauce which means a meat-based sauce. This dish originated in Bologna, Italy. It is a rich, meaty, and flavorful sauce served with cooked pasta or spaghetti. This dish can be matched with any type of pasta such as penne, angel hair,  rigatoni, you name it. The meat can be ground pork, ground beef, veal, or combination of both for that matter. This dish has a slight resemblance to Filipino Spaghetti. They are both meaty. The difference is that Filipino spaghetti is sweeter and lacking in vegetables. Bolognese sauce uses tomato paste which means it’s thicker, and it traditionally uses vegetables such as celery, carrots, etc.

There are different variations f bolognese. Some people add milk to make it creamer and some don’t. Well, in this recipe, we add milk and guess what: It’s becomes delightfully thick.  Personally, we love crush tomatoes, so that is what we used. However, you can use  diced tomatoes, stewed tomatoes, or even tomato sauce. For those who have Italian blood, you know what is historical and original. To add a final touch, sprinkle grated parmesan cheese on top. Now, your weekend pasta dish is ready to enjoy. Make your spaghetti bolognese today, and give your dinner an additional twist.

  • 300 g any kind of pasta
  • 1 small onion diced
  • 3 cloves garlic chopped
  • 2 stalks celery, diced
  • 1 medium carrot diced
  • 4 strips bacon or pancetta, cubes
  • 2 cups crushed tomatoes
  • 3 tbsp tomato paste
  • salt and pepper to taste
  • pinch oregano
  • 2 tbsp milk
  • red wine
  • olive oil / cooking oil

  1. Add a little bit of olive oil to a preheated pan.  Add in bacon and fry until light brown. Do not over fry the bacon.
  2. Add in onion, celery, carrots, garlic, and saute  for a few minutes until translucent and the onions start to sweat. This will take approximately 3-4 minutes.
  3. Place in the ground beef, break into pieces and stir until meat is light brown – approximately 5-10  minutes.
  4. Add in tomato paste and stir until it become brown and well incorporated to the meat.
  5. Pour in red wine and allow to cook until half reduced. Pour in crushed tomatoes.
  6. Season with salt, pepper, and oregano. Stir until well combined. Partially cover and allow simmer over medium heat for at least 30-40 minutes. Stir it occasionally.
  7. After 40 minutes, add the milk. Stir it constantly and cook for additional 5 minutes until the sauce thickens.Turn off heat.
  8. Cook the pasta according to package instructions. You can use any kind of pasta you prefer.
  9. Toss cooked pasta and bolognese sauce. Transfer on a platter and sprinkle with Parmesan megiano (grated Parmesan cheese).
  10. Serve and enjoy!
