Oven Chicken Stew

Oven chicken stew is a healthy, simple, easy, yet delicious, everyday meal. It is  made with chicken and a variety of fresh vegetables. This dish is easy to prepare and remarkably effective when you are rushing to prepare dinner or lunch. You can vegetables of your choice. In other words, simply add whatever you have on hand. The cut of chicken is optional. You can use a whole chicken cut up, or you can use boneless chicken breasts if you wish to make it healthier. However, chicken with bones makes it tastier.

  • 1 lb chicken, cut in bite size
  • 1 cup chicken stock
  • 1 /2 cup water
  • 1 medium carrot, cut in cubes
  • 1 medium onion, chopped
  • 1 green or red bell pepper, cut in cubes
  • 2 stalks celery, chopped
  • 1/4 cup green peas
  • 1 large potatoes, cut in cubes
  • salt and pepper
  • pinch basil

  1. Place the cleaned chicken in deep baking pan or baking dish.
  2. Add the chopped carrots, celery, onion and potatoes. Season with salt, pepper and basil. Adjust seasoning according to taste.
  3. Pour in chicken stock and water.
  4. Cover with aluminum foil. Bake in a preheated oven at 350 Degrees F for at least 1 hour or until chicken juices is clear.
  5. Serve and enjoy!
