Young corn and button mushrooms is a easy and delightful appetizer or side dish. I enjoy it served up with burgers. It is great at a party or a BBQ. I came across this recipe at a buffet when I was on vacation and loved it.
You can use just about any kind of baby or young corn in this recipe. I prefer the fresh corn in contrast to the corn in the that is in cans. It seems to have a richer, full bodied taste to it. In terms of the mushrooms, I like to use fresh button mushrooms – the fresher the better. You can get away with whole canned mushrooms, however. You can, of course, alter the amount of the ingredients to suit your taste. The suggested amounts do create a nice blend. I like my corn a little on the crunchy side. If you prefer it a little softer, add a few minutes to the cooking time. If you want it a little crunchier, cut back on the cooking time. You can serve this dish up hot, at room temperature, or place it in the fridge for a few hours and serve it up cold.

- 2 1/2 cups of whole button mushrooms, sliced
- 2 Cloves of garlic, chopped
- 1 thumb size ginger, chopped
- 1 small onion, chopped
- 2 tbsp of sweet chili sauce
- 2 tbsp of oyster sauce
- 1 tablespoon of brown sugar
- 2 medium tomatoes, sliced thinly
- 1 small red chili, chopped (optional)

- Add some cooking oil to a preheated pan. Add in the onions, garlic, and ginger. Saute them over medium heat until they become fragrant.
- Add in the young corn and mushrooms. Toss and saute them for 4 to 5 minutes. Add in the chili sauce, oyster sauce, brown sugar, tomatoes, and red chili peppers. Stir and bring the mixture to a soft boil. Place a lid on and allow it to simmer over low heat for an additional 5 to 6 minutes.
- Serve your baby corn and button mushrooms hot, at room temperature, or place it in the fridge for a few hours and serve it cold.
