Humba (Braised Pork Belly) is originally a Visayan dish and is commonly made similar to Adobo but is much sweeter due to its ingredients. There are many variations to this recipe such as using honey, orange juice, and coca cola in place of pineapple juice. It is often served at fiestas and in restaurants.

- 1 smallΒ can salted black beans (tausi)
- 1/4 cupΒ dried banana blossoms (pre soaked in water)
- 2Β bay leaves
- 2 cupsΒ pineapple chunks (optional)
- 1 largeΒ potato sliced (optional)
- 2Β hard boiled eggs
- 1/4 cupΒ vinegar
- 1/4 cupΒ soy sauce
- salt and pepper to taste
- water enough to cover the meat

- Place pork in a pot. Add the garlic, sugar, soy sauce, vinegar, bay leaves and pepper. Pour in water enough to cover the meat. Bring to a boil.
- Stir and simmer over low heat for at least 1 hour or until pork is tender.
- When pork is tender, add the black beans, banana blossoms, potato and pine apple chunks. Stir, cover and simmer for a few minutes until potato is tender.

- When potato is tender, place in hard boiled egg. Salt and pepper to taste. Let egg sit for a few minutes. Turn off heat.
