Aloha Rice and Chicken Casserole

Our aloha rice chicken casserole is simple to put together and delicious. Made with a combination of rice, chicken, onion, garlic, salt, pepper, red bell pepper, pineapple, chicken stock, brown sugar, and soy sauce, the taste is simply out of this world. If there are any leftovers, you can always pack it for lunch the next day. Believe me your family and friends will love this rice dish and beg for the recipe.

As always, You can change a few of the ingredients to meet your needs. I love basmati rice which is what I always use, but you can use long grain white rice or the rice of your choice. My preference is boneless skinless breasts but any cut of chicken can be used. I have often thought that beef might go nicely with the dish too. The garlic and bell peppers you can vary to meet your needs as well. The same applies to any ingredients in the sauce.

I often serve this up midweek as it is so easy to do. Don’t forget a nice glass of white wine and a garden salad.

Give our aloha chicken casserole and try and let us know what you think.
