Italian sausage casserole is savory, juicy, and delicious. The dish is simple to make and can be made in under an hour. In light of that, I usually make it up midweek. It’s also a dish you could make in advance, toss it in the freezer, and use it at your convenience. It’s especially nice served up with a garden salad and a nice glass of white wine. Believe me this casserole is loaded with flavor.
As with any recipe, there are a few tips to making this savory Italian casserole. I pick up the Italian sausages at the deli as the cheap frozen ones you buy in the supermarket aren’t that good. If you’re really adventurous, you cold make them from scratch. I fry them over medium high heat for about 5 or 6 minutes on each side. You just want them to the point where you get a nice brown crust. When I slice the sausages, I usually cut diagonally for appearance. Any kind of tomatoes will do, I prefer diced. Two 15 oz cans with a cup and a half of water is just about perfect. In therms of the pasta, I cook it just until it’s are al dente. This usually takes about 9 or 10 minutes. The use of caramelized onions is option, but they add such a nice touch to the dish it would be a shame to leave them out. I use a cup of mozzarella cheese. You could use more and completely cover the casserole, but I like the marbling effect. It looks so nice when you have a combination of red and yellow on the top of the Italian sausage casserole.

- 4 Italian sausages
- 2 cans of diced tomatoes
- 1 1/2 cups of water
- 3 cloves of garlic, crushed
- 1 tsp of Italian seasoning
- 1 cup of elbow noodles
- 1 cup of grated mozzarella
- 1 cup of caramelized onions

- Prepare your caramelized onions ahead of time.
- Fry the sausages, over medium high hear, until they are cooked though – about 5 to 6 minutes on each side. Remove the sausages from the pan and set them aside on a plate.
- Preheat your oven to 350 degrees F.
- Cut each sausage diagonally into 8 to 10 pieces.
- . Add the garlic to the same pan and saute, over medium high heat, until it’s fragrant – about 30 seconds. Add in the diced tomatoes and water. Bring to a boil, add in the Italian seasoning, salt, pepper, and stir. Allow it to come to a boil. Add in the elbow noodles, reduce the heat to medium, and allow it to simmer until they are al dente – about 10 minutes.
- Turn off the heat, add the Italian sausages, and caramelized onions. Mix until everything is well Β combined. Sprinkle the mozzarella over the top.
- Add the mixture to a casserole dish and place in a 350 degree preheated oven for 20 minutes or until the cheese has melted.
- Sprinkle some parsley flakes over the top, serve, and enjoy your Italian sausage casserole.
