Leftover ham and fried rice is a great idea for your holiday leftovers. If you’re anything like me, you have tons of leftovers after the holidays such as ham, rice, and vegetables. This dish is a great way to use them up. As always, if you have any preferred spices, by all means use them. You can use precooked rice, or you can make it from scratch. You can also use additional leftover vegetables. This dish can be served up solo or with the main dish of your choice.

- 1 cup ofΒ diced ham
- 1/2 cup of corn
- 1/2 cup of frozen peas
- 1 egg
- 2 cups of cooked rice
- cooking oil
- 2 tablespoons soy sauce
- 1/2 teaspoon garlic powder

- Add some cooking oil to the preheated pan over medium-high heat. Put the leftover ham in, and fry it for about 2 minutes. Add in the rice, mix, and fry it for an additional minute or two.
- Using a wooden spoon, push the rice and Β ham to one side of the pan. Add a little bit more cooking oil to the open side of the pan, and crack and the egg in. Scramble it, and allow it to set. Β Mix the egg in with the rice and ham.
- Add the peas, corn, and soy sauce. Fry and mix until everything is well combined. Serve and enjoy your leftover ham and Rice.
