Slow cooker chili is one of my all time favorites. It is an easy, delicious, no fuss recipe. As I have stated in previous slow cooker recipes, you can prepare it the night before in the crock pot liner and slip it in the fridge. When you get up the next morning, put it in the slow cooker, turn it on, and head off to work. When you get home, dinner is ready.
As always, there are a few additional tips to making this dish. The recipe calls for a number of spices. You can, however, alter them according to your taste. If you want a little more chilli powder, simply add it. If you don’t like cumin, leave it out. If you use the suggested spices, however, you will find they blend together nicely.
Many people will turn their noses up at the thought of adding spaghetti sauce to chili. Believe me, it really adds a nice touch. I use a fairly sweet Del Monte sauce as I like a little bit of sweetness to my chili. You can use your favorite sauce or leave it out all together.
Slow cooker chili usually takes about 7 or 8 hours to cook on low. You can speed up the process by putting your slow cooler on high and reduce the cooking time to 4 hours. You have to remember that part of the trick to cooking chili is to have the ingredients blend together as they slowly cook. This is why a slow cook is better.

- 1 1/2 lbs of ground beef (lean is best)
- 2 cans of kidney beans, drained
- 2 cans of crushed tomatoes
- 2 small red bell peppers, diced
- 1/2 medium onion, diced
- 2 1/2 tbsp of chili powder
- 3 cloves of garlic, minced
- 1/8 tsp of crushed peppers
- 1 can of tomato or spaghetti sauce
- 3 stalks of celery, diced
- 1/2 tsp of salt
- 1/2 tsp of ground pepper
- 1/2 tbsp of cumin

- Place the ground beef in a pan. Over medium high heat, fry it until it’s browned. Drain any excess fat off.
- Add the ground beef, kidney beans, crushed tomatoes, bell peppers, onions, chili powder, garlic, crushed peppers, spaghetti sauce, celery, salt, pepper, and cumin to the slow cooker. Stir it until everything is well combined. Cook it on low for 7 to 8 hours.
- Ladle the chili into a bowl and enjoy your slow cooker chili.
