Quick Chicken Parmesan and Mozzarella

Quick chicken parmesan and mozzarella is a simple and easy recipe. The great thing is, it can be made up in 30 minutes which makes it a perfect midweek meal. If you’re anything like me , I like to come home and have dinner on the table in half an hour. This is especially apparent during the week. My family and friends sometimes comment that there is no way you made this in 30 minutes. My response, tongue in cheek, is: “How did you know.”

Description

Imagine creating a fantastic chicken parmesan dish covered with marinara sauce on gooey mozzarella in just 30 minutes. I thought it was impossible, but here it is.

  1. Season the chicken breasts with salt and pepper.

  2. Add the bread crumbs and parmesan to a bowl. 

  3. Add the flour to the first dredging station. Place the chicken in the flour and dredge until completely coasted. Shake to get any excess off.

  4. Add the eggs to a second bowl and mix them well. Dredge the chicken into the eggs until completely coated.

  5. Add the bread crumbs and Parmesan to a third bowl. Dredge the chicken until coated.

  6. Place each piece of chicken onto a baking dish lined with a mat or Parchment paper. 

  7. Pour some olive oil into a pan. Put the chicken in and fry until golden brown and cooked through. This should take about 2 minutes on each side.

  8. Place the chicken back onto the baking tray. Spread the marinara sauce over the middle of it followed by the mozzarella. Sprinkle some basil over the top.

  9. Place into a 425 F or 220 C preheated oven for about 12 minutes or until cheese is melted.

  10. Serve and enjoy your quick chicken parmesan with mozzarella.

Note

I use store bought marinara, but you can use spaghetti sauce, tomato sauce, or make your own from scratch.

Extra seasoning can be added to the bread crumbs, as well. I use Italian as they are already seasoned, but you can use any kind you wish.
