Common Ingredient Substitution Chart

Have you run out of an ingredient or can’t find it? Well feel free to use the Cook n’ Share substitutions guide.

Ingredient Amount What to Substitute
Allspice 1 tsp 1/2 tsp of ground cinnamon, 1/4 tsp of ginger, and 1/4 tsp of ground cloves
Baking Powder 1 tsp 1/4 tsp of baking soda, 1/2 tsp cream of tartar; alternatively, 1/4 tsp of baking soda and 1/2 cup of buttermilk (But remember to decrease any liquid in the recipe by 1/2 a cup)
Beer 1 cup 1 cup of non alcohol beer or a cup of chicken stock
Brandy 1/2 cup  2 tsp of brandy extract and 1/2 cup of water 
Bread Crumbs 1 cup 1 cup of broken up crackers or 1 cup or a cup of ground oats
Beef or Chicken Broth 1 cup 1 bouillon cube combined with 1 cup of boiling water; alternatively, 1 tablespoon soy sauce combined with enough water to make 1 cup. A cup of vegetable broth can also be used instead of water.
Brown Sugar 1 cup, packed 1 cup white sugar combined with a 1/4 cup of molasses (Remember to decrease the liquid in the recipe by a 1/4 of a cup). You can also use 1 cup of white granulated sugar or 1 1/4 cups of confectioners’ sugar
Butter (Salted) 1 cup 1 cup margarine or 1 cup shortening combined with  1/2 teaspoon of salt. 7/8 cup of vegetable oil or lard  combined with 1/2 teaspoon salt can also be used.
Unsalted Butter 1 cup 1 cup of shortening, 1 cup vegetable oil, or 1 cup lard
Buttermilk 1 cup 1 cup of yogurt plus 1 tablespoon lemon juice; alternatively, 1 tbs of vinegar combined with a cup of milk     
Cheese (Cheddar) 1 cup shredded 1 cup of grated Colby or Monterey Jack
Chervil 1 tbsp 1 tablespoon of fresh parsley, chopped 
Chicken Base 1 Cup 1 cup of canned or homemade chicken stock (Remember to reduce the liquid in the recipe by 1 cup)
Semisweet Chocolate 1 oz 1 one oz square of unsweetened chocolate combined with 4 tsp of sugar or 1 oz of semisweet chocolate chips combined with 1 tsp of shortening
Chocolate (Unsweetened) 1 oz 3 tbsp of unsweetened cocoa combined with 1 tbsp of shortening or vegetable oil
Cocoa 1/4 cup 1 one oz square of unsweetened chocolate
Cream of Mushroom Soup (Condensed) 1 (10.75-ounce) can A 10.75-oz can of condensed cream of celery, or cream of chicken, or golden mushroom soup
Corn Syrup 1 cup 1 1/4 cups of white sugar combined with 1/3 cup of water; alternatively 1 cup of honey or 1 cup of light treacle syrup 
Cottage Cheese 1 cup 1 cup of farmer’s cheese or a cup of ricotta cheese
Cracker crumbs 1 cup

1 cup of bread crumbs or  ground oats

Cream (Half and Half) 1 cup 1 cup of milk combined with a tablespoon of butter 
Heavy Cream 1 cup 1 cup of evaporated milk or 3/4 cup of milk combined with 1/3 cup butter
Light Cream 1 cup 1 cup evaporated milk or 3/4 cup of milk combined with 3 tbsp of butter
Whipped Cream 1 cup 1 thawed cup of frozen whipped topping
Cream Cheese 1 cup 1 cup of cottage cheese, pureed; alternatively 1 cup of plain yogurt which is strained overnight in cheesecloth
Cream of Tartar 1 tsp 2 tsp of lemon juice or vinegar
Crème Fraiche 1 cup 1 cup of heavy cream combined with 1 tbsp of plain yogurt. You must, however, let it sit for 5 or 6 hours at room temperature 
Egg 2 1/2 tbsp of powdered eggs combined with 2 1/2 tbsp of water; alternatively, 3 tbsp of mayonnaise or half a of a ripe banana mashed with 1/2 teaspoon of baking powder
Evaporated Milk 1 cup 1 cup of light cream
Farmer’s cheese 4 oz 4 oz of dry cottage cheese or 4 oz of creamed drained cottage cheese
Baking Fats 1/2 cup 1/2 cup of applesauce or 1/2 cup of pureed fruit
Bread Flour 1 cup 1 cup of all purpose flour combined with a tsp of wheat gluten. You can buy this a health food stores or some supermarkets.
Cake Flour 1 cup 1 cup all purpose flour less 2 tbsp
Self – Rising Flour 1 cup 7/8 of a cup of all purpose flour combined with 1 1/2 tsp of baking powder and 1/2 tsp of salt
Garlic Cloves 1/8 tsp of garlic powder or 1/2 tsp granulated garlic or garlic salt 
Gelatin 1 tbsp 2 tsp of agar agar
Dry Ginger 1 tsp 2 tsp of fresh ginger, chopped
Fresh Ginger 1 tsp 1/2 tsp of ground ginger
Green Onions 1/2 cup , chopped 1/2 cup of chopped onions; alternatively 1/2 a cup of chopped leeks or challots
Hazelnuts 1 cup  1 cup macadamia nuts or almonds
Fresh Herbs 1 tbsp 1 teaspoon of dried herbs
Honey 1 cup 1/3 cup water added to 1 1/4 cups white sugar; alternatively, 1 cup of corn syrup
Hot Pepper Sauce 1 tsp 3/4 tsp of cayenne pepper added to 1 tsp of vinegar
Ketchup 1/2 cup 1/2 tsp of vinegar and 1/2 tbsp of sugar (depending on desired sweetness) added to 1 cup of tomato sauce 
Lard 1/2 cup 1/2 cup of shortening; alternatively, 1 cup of vegetable oil or a cup of butter
Lemon Grass 1 stalk 1/2 tbsp of lemon zest
Lemon Juice 1 tsp 1/2 teaspoon vinegar; alternatively, 1 tsp of white wine or lime juice
Lemon Zest 1 tsp 1/2 tsp of lemon extract or 2 tablespoons lemon juice
Lime Juice 1 tsp 1 tsp of vinegar; alternatively, a tsp of white wine or lemon juice
Lime Zest 1 tsp 1 tsp of lemon zest
Macadamia Nuts 1/2 cup 1/2 cup of almonds or hazelnuts
Mace 1 tsp 1 tsp of nutmeg
Margarine 1/2 cup 1/2 cup of shortening and 1/4 tsp of salt; alternatively, 1/2 cup of butter or 1/2 cup of vegetable oil and 1/2 tsp of salt
Mayonnaise 1/2 cup 1/2 cup of sour cream or plain yogurt
Milk 1 cup 1 cup of soy milk or 1 cup of rice milk; alternatively 1/4 cup of powdered milk or juice 
Mint–fresh 1/4 cup 1 tbsp of dried mint leaves
Molasses 1/2 cup 3/4 cup of brown sugar combined with 1 tsp of cream of tartar
Prepared Mustard 1 tbsp 1 tbsp of dried mustard mixed with 1 tsp of water, 1 tsp of vinegar, and 1 tsp of sugar
Onions 1 cup 1 cup of chopped green onions, shallots, or leeks; alternatively, 1/4 cup of dried onions or onion powder
Orange Juice 1 tbsp 1 tbsp of any citrus juice
Orange Zest 1 tbsp 1/2 tsp of orange extract or a tsp of lemon juice
Parmesan Cheese 1/2 cup 1/2 cup of Romano cheese
Parsley 1 tbsp, fresh 1 tbsp of fresh chervil or 1 tsp of dried parsley
Pepperoni 1 oz 1 oz of salami
Raisins 1/2 cup 1/2 cup of dried currants; alternatively, 1/2 cup of dried cranberries or pitted prunes, chopped
White Rice 1 cooked cup 1 cup of barley or bulgur, cooked; alternatively, 1 cup of cooked brown or wild rice
Ricotta Cheese 1 cup 1 cup of cottage cheese, dry; alternatively, 1 cup of silken tofu
Rum 1 tbsp 1/2 tsp of rum extract and water to make 1 tbsp 
Saffron 1/4 tsp 1/4 tsp of turmeric
Salami 1 oz 1 oz of pepperoni
Semisweet Chocolate Chips 1 cup A cup of chocolate candies or dried semisweet fruit 
Shallots 1/2 cup 1/2 cup of chopped onions, leeks, or green onions
Shortening 1 cup 1 cup of butter or margarine (I margarine is used, take 1/2 tsp of salt from away from the recipe)
Sour Cream 1 cup A cup of plain yogurt or 3/4 cup of whipping cream and 1/4 cup of buttermilk or melted butter
Stock – Beef or Chicken 1 cup 1 cube of beef or chicken bouillon or a of beef or chicken stock dissolved in a cup of water
Vegetable oil (Baking) 1 cup A cup of applesauce or any pureed Fruit
Vegetable oil (Frying) 1 cup 1 cup lard or shortening
Vinegar 1 tsp 1 tsp of lemon or lime juice; alternatively, tsp of any white wine
White Sugar 1 cup 1 cup of brown sugar or 1 1/4 cups of confectioners; alternatively, use 3/4 cup of honey or cup corn syrup
Wine 1 cup A cup chicken or beef broth; alternatively use 1 cup of fruit juice mixed with 2 teaspoons of vinegar
Yeast – Active Dry 1 pack (.25 oz) 2 1/2 tsp active dry yeast or 2 1/2 tsp of rapid rise yeast
Yogurt 1 cup 1 cup of sour cream or a cup of buttermilk
