This way, you can also state the amount of fat you want left on the meat. It is usually best to have a centimeter to a centimeter and a half of fat. Depending on the size of your oven, you may find it necessary to blanket the top of the pork after an hour or two of baking to prevent it from becoming too brown or burning.

- Preheat your oven to 350Β°F
- Using a sharp knife, diagonallyΒ score the meat from one side to the other. Then, from the opposite edge of the meat, diagonally score it the other way. Each of the scores should be between one half and three-quarters of an inches wide and resemble a diamond shape. Place the cloves between each diamond.
- Add the brown sugar, maple syrup, honey, Dijon mustard, cinnamon, and ginger to a small saucepan. Over low heat, stir the ingredients consistently until they become runny and liquidy. This should only take 30 seconds to a minute.
- Using a small brush, apply a nice layer of glaze to the pork leg. Be sure to brush gently, as the cloves may fall out.
- Place a wire rack on top of a baking tray. Add in two or 3 cups of water, and put the pork leg onto the wire rack. Place it in the oven and allow to cook for approximately 7 hours or until the internal temperature reaches 160Β°C. Open the oven and apply a layer of glaze every hour while it’s baking. You will also have to keep adding water to the baking tray to keep the pork leg moist.
- After seven hours, remove the pork leg from the oven, and slice it into serving pieces. Enjoy your honey glazed pork roast leg.
