Parmesan Chicken Roll Ups

Parmesan chicken roll ups are so easy to make, incredibly tasty, and economical. They are fast to prepare as they can be made, from beginning to end, in about 30 minutes or so. I always make them for social gatherings or any party I host and my guests rant and rave about them. They are also fantastic for a midweek meal. Most of the ingredients you will have in your pantry or fridge. Believe me, your family and friends will love them. 

Boneless skinless chicken breasts are used in this recipe. The breasts are easy to obtain and work with, not to mention healthy. I season the chicken with salt, pepper, and garlic only. Other spices can be used as well. For example, some thyme or rosemary would no go amiss. 

I always use the Pillsbury crescent rolls. They are sold in just about any grocery store and are delicious coated with some butter. Mozzarella and parmesan cheese are used in the roll ups. I find that the cheeses blend so nicely together to make the roll ups so tasty.

Ingredients
  • 2 large chicken breasts cut in half and then cut diagonally which makes a total of 8 pieces
  • 1 package of Phillsbury crescent rolls – 8 in total
  • 8 good slices of mozzarella cheese
  • 3/4 cup of grated parmesan cheese
  • salt and pepper
  • 1 tsp of garlic powder
  • 1 tbsp of melted butter
  • parsley or cilantro for garnish
  • marinara sauce for dipping (optional)
  • butter for frying
  • baking spray
Instructions
  1. Preheat your oven to 375 f or 177 C.
  2. Season the chicken with salt, pepper, and garlic on both sides. Melt some butter in a pan over medium high heat. Place the chicken in and fry, on each side, until the chicken is browned on the outside and no longer pink on the inside. Set it aside on a plate.
  3. Line a baking tray with aluminum foil and spray with baking spray.
  4. Roll the crescent rolls out so they form their usual preformed triangles.
  5. Place a piece of chicken at the large end of the triangle followed by a slice of mozzarella and roll it up.
  6. Coat the top side of each roll with melted butter and sprinkle the parmesan cheese over.
  7. Place in the oven for 18 to 20 minutes or until the crescent rolls are browned.
  8. Garnish with parsley and enjoy your parmesan chicken roll ups.
