Add the oil to a pan over medium high heat. Place the ground beef in and fry until browned and cooked through.
Move the beef to one side of the pan and add in the onion and garlic. Stir and saute until fragrant and mix together.
Move the mixture to one side of the pan again and add in the rice. Stir and fry for about 2 minutes. Add in the tomatoes, beans, corn, hot peppers, cumin, chili powder, salt, and pepper. Stir and fry until well combined.
Pour in the broth, bring to a boil, cover, lower the heat to medium low, and simmer for about 20 minutes.
After 20 minutes, remove the top and spread the cheese over. Place the lid back on and cook for another 5 minutes.
Plate, garnish with cilantro, and enjoy your Mexican ground beef and rice skillet.
