Chicken Pita

Chicken pita is a delicious Middle Eastern sandwich made with chicken, pocket pita bread, fresh vegetables toppings, and cucumber dressing. It is commonly found on a rotisserie in any Arabic restaurant along with shawarma and other kebab food. The dressing is easy to prepare and perfect for this sandwich.

For marinade:

  • 4 medium chicken breasts
  • 1 tbsp lemon juice
  • 1 tbsp all spice
  • 2 tbsp olive oil

For Cucumber dressing:

  • 1 cup plain yogurt
  • 1/2 cup cucumbers, chopped
  •  1 tbsp lemon juice
  • 1 clove garlic, crushed
  • 1/2 tbsp dried or fresh dill
  • salt and pepper to taste

For Toppings:

  • pocket pita bread, cut in half
  • 1 medium onion, chopped
  • 1 large tomatoes, chopped
  • 1/2 cup sweet pickles or dill
  • iceberg lettuce, chopped

  1. Marinate the chicken with the marinating ingredients. Set it aside in the fridge for at least 30 minutes. You can substitute vinegar for the lemon juice, as well. However, make sure you don’t marinate it longer than  3 hours as the vinegar will begin to cook the chicken.
  2. Place chicken in a rotisserie and cook it in a  preheated oven at 200 Degrees C  for at least 45 minutes to an hour. Alternatively, fry the chicken in a pan or on a barbecue until fully cooked. Set it aside and slice it into strips or cubes, depending on your preferences.
  3. To make the dressing, peel and chop the cucumber into small cubes and add it to the rest of the dressing ingredients. Adjust the seasoning according to your taste. Take note: after sitting in the fridge, the dressing will become increasingly stronger and tastier. In light of this, leave it in a fridge, for at least an hour,  after you are ready to use it.

  5. Cut the pita bread in half.  Stuff it with the sliced chicken, toppings, and dressing.
  6. Heat before serving and enjoy!
