Pesto lasagna is a great alternative to traditional lasagna. The potatoes make it creamy. The green beans add texture, and the pesto sauce makes it simply out of this world. I usually make it up on the weekend. Believe me, it’s an instant hit.
There are a few tips to making this recipe. You can make your pesto from scratch or buy it from the grocery store. In the future, I’m going to the same recipe with sun dried tomato pesto, so you could also give that a try. Spinach could be used in place of the green beans. Any type of potatoes can be used. You could even consider using sweet potatoes. You can make as many layers as you want depending on the depth of your dish. This recipe makes 2 nice layers. If you wanted 4, you would have to double the recipe.

- 3 tbsp of unsalted butter
- 3 tbsp of flour
- 2 potatoes, boiled and thinly sliced
- 1 1/2 cups of milk
- 1/2 cup of grated cheddar cheese
- 3-4 tbsp of basil pesto
- 1 bundle of green beans, blanched, chopped

- Boil the potatoes until they’re fork tender and cut them into slices. Set them aside.
- Place the green beans into boiling water, and cook them for about 4 minutes. Cut them into bite size pieces and set them aside.
- Preheat your oven to 350 degrees F.
- Melt the butter in a pan over medium heat. Add in the flour and whisk until a roux forms. Add in 3/4 cup of milk and whisk until it thickens. Pour in the other 3/4 cup and whisk until it becomes slightly thickens and creamy. Turn off the heat and whisk in the cheese. Add the pesto in and whisk once again.
- Add a layer of the pesto sauce to a baking tray followed by a layer of the lasagna noodles. Add another layer of the sauce followed by the potatoes and green beans. Continue this process for the desired number of layers and top with mozzarella cheese.
- Place the pesto lasagna in the oven for half an hour.
- Slice, serve, and enjoy your pesto lasagna.
