Chicken Curry in a Hurry

If you're anything like me, you hate the middle of the week and dinner is simply an additional burden. Make dinner easy with this fast and delicious chicken curry in a hurry. As one member said: "After making this dish, I feel like the clocks went back 2 hours."

  1. Chop chicken into bit size pieces and season with salt and pepper.

  2. Add oil to a medium size pan. Place in chicken and fry until browned and cooked through. 

  3. Add in tomatoes, onions, garlic, and ginger. Saute for 2 o 3 minutes until the onions begin to become translucent.

  4. Add in the curry and stir until the meat is coated.

  5. Put the tomatoes and water in. Stir to mix and deglaze the pan, place a lid on, and allow to it to simmer for about 10 minutes.

  6. Serve over hot rice and garnish with green onions.

  7. Enjoy you chicken curry in a hurry.

There are several changes you can make to the recipe. To begin with, I use boneless, skinless chicken, but you can use the cut of your choice. Just adjust the cooking time accordingly.

The type and amount of seasoning can be changed to meet your needs as well. For example, I use mild curry but medium or hot can be used as well.
