  1. Poke the skin of belly with a sharp object like knife, stick or fork. 

  2. Season with salt. Chill in the fridge for 3 hours. Overnight is the best.

  3. Flip to the other side and season with salt and pepper. Transfer in a wire rack skin side up.

  4. Wipe the top with paper towel to dry. Bake in preheated oven at 375 F for 60 minutes.

  5. Then, change the setting to broil for few minutes until the skin is crispy golden brown. 

    Do not over broil, it will get too brown and tough.
  6. Slice into cubes. Serve with your favorite sauce, rice or veggies. Enjoy
