Easy Inside Out Pancakes

Ever get tired of normal boring pancakes? Try our easy inside out pancakes. They only involve a bit of time and a few simple ingredients. No syrup required for these tasty inside out treats. The use of sugar and cinnamon inside of the pancakes takes care of that.

I first had these in South Korea. They are a street food commonly served there called hotteok. After having one, I was hooked. Of course, I had to come home and attempt to make them. The outcome was phenomenal.

I got tired of humdrum everyday pancakes and decided to try some yummy sugar cinnamon inside out pancakes. The outcome was out of this world. One breakfast guest said: "You sure don't need syrup with these delightful treats."

  1. Combine the dry ingredients in a mixing bowl. Whisk until well combined. 

  2. Pour the wet ingredients into the dry and mix until a dough forms. Cover the bowl, place it in a warm place, and allow to rise and double in size. This should take about an hour. 

  3. In the mean time, combine the ingredients for the filling in a separate bowl. Mix until combined. Set aside. 

  4. Once the dough has risen, oil you hands and grab up a good pinch and place it in the palm of your hand. Roll it into a 2 inch ball and set it aside on a baking sheet lined with parchment paper. Repeat the process for the remaining dough.

  5. Set each dough ball onto a flat surface and roll it out into a 6 inch disk. Place a heaping tablespoon of the mixture into the centre. Fold all of the edges toward each other and pinch shut. Set them aside, seam down, onto the baking sheet. 

  6. Add some oil to a preheated pan over medium low heat. Place the pancake in and firmly flatten it down using the bottom of a bowl, plate, or other flat surface. Allow it to fry for about 40 seconds or until nicely browned. Flip and do the same on the other side. Set the pancakes aside on a plate.

  7. Serve and enjoy your inside out pancakes.

Note

I use rice flour as it adds a bit more body to the pancakes. If you don't have it on hand, use all purpose flour.

You can vary the amount of the ingredients in the filling according to your liking. I use a combination of peanuts and walnuts, but you can use the nuts of your choice. If you don't like nuts, leave them out. 

If you are diet conscious, simply reduce the amount of sugar in the pancakes.
