We make our mozzarella cream cheese stuffed chicken with a delicious combination of boneless skinless breasts stuffed with cherry tomatoes and seasoned with salt, pepper, and garlic.The breasts are fried and stuffed with an egg whites, garlic, cream cheese, mozzarella, and pepper. The chicken is finally topped with an extra layer of melted cheese. The outcome is a dinner to die for.

Description

I love chicken plain and simple. There are so many recipes you can conjure up with it. This mozzarella cream cheese stuffed chicken has to be a Cook n' Share classic. It's an easy midweek meal the entire family will love.

  1. Lay the chicken breast out. Using a sharp knife, slice them lengthwise down the centre about 3/4 the way down. Leave a bit of unsliced chicken at each end. Insert about 4 cherry tomatoes into the slice of each breast. Season them with the salt, pepper, and garlic powder. I just season on the top side, but you can do the bottom side when you flip them during frying.

  2. Add oil to a pan over medium high heat. Fry the breasts for about 6 minutes on each side until cooked through. Don't worry if a few of the tomatoes fall out when you flip them.

  3. While the breast are frying, separate the yolks from the whites and place them in separate bowl. Use the yolks for another application such as scrambled eggs. Make the filling by combining the egg whites, minced garlic, cream cheese, mozzarella, and pepper. Mix until well combined.

  4. When the chicken is cooked remove the tomatoes and evenly add the mixture to each cavity. Top with the remaining mozzarella cheese.

    Use the tomatoes as a side dish. They are filled with flavour.
  5. Place a lid on and continue to fry the breasts over medium low heat for about 10 minutes. 

  6. Plate, garnish with cilantro, serve, and enjoy.

Note

You can also use thighs, although they will be a bit more work as they are smaller.
