As stated in the title, there are three things I love in life: chicken, Italian food, and stews. This one pan Italian chicken stew certainly meets all three of these criteria. The great thing is, it can be done so quickly and all in one pan. Just a matter of grabbing up some chicken, marinara sauce, seasoning, and some vegetables. Put them together and wallah, do you have a stew is beyond words and absolutely out of this world. It’s an excellent midweek meal I might add.

If you know me, you know I'm always looking for a quick and delicious midweek meal. This simple and easy one hot Italian chicken stew certainly fits the bill. As always with our recipes, most of the ingredients you will have right in your pantry. Believe me, this zesty Italian dish will have your dinner guests ranting and raving for weeks.

Add some olive oil to a pan over medium high heat. Placed the chicken in and seasoned with salt, pepper, and Italian seasoning. Fry for 4 to 5 minutes. Flip the chicken over and seasoning the other side. Continue to fry for another four minutes or so until the chicken is done.Β

Add in the onion and garlic. SautΓ© for about two minutes until the garlic is fragrant.

Pour the marinara sauce in and stir until the chicken is completely coated. What I usually do is place a bit of water into the bottom of the jar and shake it to get any excess marinara sauce.

Add in the potatoes, bell peppers, celery, carrots, and olives. Add additional seasoning after tasting. Stir until everything is nicely combined.Β

Spread the green beans over the top, place a lid on, reduce the heat, and allow the students simmer for about 20 minutes depending on the size of the potatoes and carrots.

Note
I use chicken thighs with skin on and bone in. It just seems to add that extra little bit of flavor. However, you can use boneless skinless thighs or even breasts if you'd like.
As always, adjust the seasoning according to your liking. Add or omit any seasoning you feel necessary.
You can make the marinara sauce from scratch, but I just find it a lot of work. In light of this, feel free to use marinara sauce in a jar.
