Spectacular Easy Cheesy Stovetop Ribs with Pineapple Juice

Just as the title suggests, these ribs are easy, cheesy, and spectacular. The marinate is beyond simple. Soy sauce, pineapple juice, and pepper. That’s it! The pineapple juice tenderizes the meat while the soy sauce and pepper gives it that unique taste. Of course other ingredients are added during the cooking process to give the ribs a superb taste and texture. This is one recipe your family and friends will go crazy over. Just a hint: serve them up with some mashed potatoes to make them out of this world.

Description

I came home one night hungry for ribs. I really didn't want to make them as they take so long and take out just seemed out of the question. Then, I remembered a stovetop  rib recipe a friend put together and went for it. Let me tell you, I was not disappointed. You won't be either.

  1. Add the ribs to a bowl followed by the pineapple juice, soy sauce, and pepper. Mix until well combined. I usually let them sit for a few minutes, but you can leave them overnight for best results.

  2. Add the oil to a pan over medium high heat. Put the ribs in and fry them on both sides until you get a nice sear and colour. Set them aside on a plate. 

  3. In the same pan, add in the onion, garlic, and tomatoes. Stir and saute until the garlic becomes fragrant.

  4. Put the ketchup in followed by the marinate and water. Stir until well combined and bring to a boil. 

  5. Add the ribs back in, reduce the heat, place a lid on, and allow it to simmer for about 15 or 20 minutes until the ribs are tender.

  6. Add in the bell pepper, peas, and cheese. Stir until well combined and allow to simmer for an additional 5 or 10 minutes. 

  7. Plate and top with some extra grated cheese (which is completely optional), serve, and enjoy.

Note

I use pork ribs but beef ribs can be used as well.

Adjust the ingredients according to your liking. 

Marinate the ribs for a couple of hours or overnight for best results.
