Spiced Mashed Potato Egg Rolls

I’m a true lover of Asian food. If it’s an American, Asian fusion, then you certainly have my attention. This recipe checks all of the boxes and then some.

I never would have imagined mashed potatoes in an egg roll wrapper. As a matter of fact, even the thought of it was a turn off. After trying it, however, I was shocked with the flavour, texture, and spice. It certainly won favour in my books. When you combine these rolls with some Thai chilli sauce, they are out of this world.

Believe it or not, these rolls are a simple combination of spices mashed in potatoes and then presented in an egg roll wrapper. The very concept is laughable, but when I tried these the last laugh was on me. A must try.

  1. Boil the potatoes until they are fork tender. This should take about 15 minutes. Place them into a bowl and mash until well combined. 

  2. Add in the butter, curry, garlic, salt, and pepper. Mix them in using a spatula or spoon until well combined. 

  3. Place the egg roll wrapper on a flat surface so it looks like a diamond. Spread some water around the outside edges to seal them. Place some the mashed mixture onto the middle leaving a bit of bare wrapper on the ends. Fold each end of the diamond (end) toward the middle and roll them up. Set them aside on a plate.

  4. Place the oil into a wok and heat it to 350 degrees F or 180 C. Place the rolls in, in batches, and fry for 3 to 4 minutes until they're golden brown. Flip them half way through of course.

  5. Set them aside on a wire rack. Serve with your favourite sauce and enjoy your spiced mashed potato egg rolls.

Note

The most important variation to this recipe is the spicing. You can alter it according to your liking or add extra spices if you wish. For example, some cumin, etc. could be added.
