I lived in the Philippines for two years. You can’t live among the Filipinos and not have adobo. That is simply unheard of and insulting to the nationals . After tasting adobo, there was no turning back. The taste is intoxicating and addictive to say the least.
Adobo is a recipe that is created to sit without refrigeration for a rather lengthy period of time. That accounts for the vinegar and other ingredients in the dish. At the onset, one would think these ingredients are rather odd, but the outcome is a blend of flavours that is incredible.
The great thing is adobo can be made with chicken or pork. I suppose one could even try it with lamb; although, I have not known many that have.
