Tortang Giniling is the Filipino version of a ground beef omelet. This is a recipe which is easy to prepare and is frequently served for breakfast in the Philippines. For a healthier version of this, you can substitute chicken instead of beef. The tricky part of making this, as with any omelet, is flipping it over.
I used to have difficulty achieving a perfectly round omelet and, as a result, frequently ended up breaking it. As a result of many attempts, I have developed some tips for cooking a perfect omelet. Let me share these with you. It is best to use a non stick pan. Allow the egg to cook firmly on one side before flipping it to the other side. If you flip it and the top side of the egg is still runny, you will probably have a crack in your omelet. Another tip is using a plate to cover the pan. Flipping it upside down and gently sliding back it to the pan. Watch the video on how we make our omelet. Without cracks and just about perfect. Take some time and practice. Don’t worry, you don’t have to be fancy, perfect or not, there is only one destination for this dish and that is in your stomach.

- Add coking oil to a preheated pan. Saute the onion and garlic until soft and fragrant.
- Put in potato and stir for at least 2 minutes.
- Place the ground beef in. Stir together for a few minutes until ground beef is light brown.
- When potato and ground beef are cooked, set aside and drain excess oil.
- Whisk eggs in a mixing bowl. Put the sauteed ground beef in. Season with salt and pepper. Whisk until well combined.
- Add fresh cooking oil to a preheated pan. Pour the egg mixture in, and make sure it’s well distributed.
- Turn the heat to low and allow egg to cook until the bottom side becomes slightly firm, and the top is not runny. Cook for approximately 3-4 minutes.
- When the bottom side is fairly firm, turn off the heat. Cover the pan with a plate and carefully flip the omelet onto it.
- Gently slide the egg back in the pan and turn on the heat. Let the egg cook for another 2 minutes. Turn off heat.
- Slice and serve with ketchup. Enjoy!
