It’s a meal that your family and dinner guests will rant and rave over for weeks. The great thing is, it involves a few simple ingredients you will have tucked away in your pantry. The only thing you might have to go out and buy are artichokes and chicken.

I'm always on a quest for the simplest and most delicious midweek meal I can find. As a matter of fact, I get annoyed if I can't make it in under 30 minutes. Well, this Greek chicken recipe certainly checked all of the boxes.

  1. Add the oil to a pan over medium high heat. Place the chicken in and season with salt, pepper, thyme, and rosemary. Stir and fry until browned and cooked through. This should take about 5 or 6 minutes.

  2. Add in the garlic and stir and saute for about 2 minutes until the garlic is fragrant.Β 

  3. Place in the olives, artichokes, and sun-dried tomatoes. Stir and fry for 3 to 5 minutes.

  4. Serve over the rice and garnish with parsley.Β 

  5. Enjoy your Greek chicken and rice.

Note

If you can't find artichokes, which really make the dish, you can use asparagus or brussel sprouts. I do strongly suggest you get the brussel sprouts, however. Most grocery stores carry them.

You can also boneless skinless thighs in place of the breasts for a bit more flavour.Β 

Roasted bell peppers also go nicely with the dish.
