- 1 lb. beef, sliced thinly
- 1 small carrot, cut in strips
- 1/4 cup corn starch
- 2 garlic cloves, chopped
- 2 eggs, beaten
- salt and pepper
- cooking oil
For the sauce:
- 1/4 cup soy sauce
- 3-4 tbsp rice vinegar
- 2 stalks green onions, sliced diagonally
- 2 garlic cloves, chopped
- 1/4 cup brown sugar

- In a mixing bowl, beat eggs, cornstarch, salt and pepper until it becomes a well combined, thick batter.
- Dip in sliced beef, in batches, until well coated with batter.
- Add cooking oil in a skillet. Fry coated beef, in batches, over medium heat for at least 2 minutes ( 1 minute on each side). Set aside on a plate with paper towel.
- Dip sliced carrots in the remaining batter and fry over medium heat for at least 2 minutes. Set aside.
- Add a little bit of cooking oil in the same pan. Saute green onions, garlic and ginger until soft fragrant.
- Put in soy sauce, vinegar, and sugar and bring to a boil. Put the fried beef and carrots back in the pan and stir until well combined. Turn off heat.
- Serve with steamed rice or cooked egg noodles. Enjoy!
