I love breakfast, especially if it’s fast and easy. Believe me, you can make up these quick and easy breakfast quesadillas in less than 15 minutes and they are absolutely scrumptious. It’s simply a matter of grabbing up some eggs, tortillas, a bit of seasoning, some cheese, and a few extra things you like. Put them together, and you have a breakfast here for the entire family that’s out of this world. Of course, you don’t have to use the ingredients in this recipe. You can use any of your personal favourites.

Breakfast Quesadillas in Minutes
Description
These breakfast quesadillas are the fastest and most delicious breakfast treats I've ever had. It's like going to a fast food place, ordering, and getting your meal. That's how fast you can make them up. You can also make them up ahead of time, put them in the fridge, and microwave them. The ultimate breakfast.

Add 2 eggs, 1 chopped green onion, bell pepper, salt, pepper, and garlic to a mixing bowl. Mix until well combined. In a second mixing bowl, add the remaining two eggs, onion, salt, pepper, and garlic. Mix until well combined.

Add a tbsp of butter to a non-stick pan over medium low heat. Pour the egg mixture with the bell pepper in. Cook for a few minutes and allow it to set a little bit - about 3/4 set.

Place the tortilla on top and press to make it stick. Flip it over and add on the grated cheese and sausage. Fold one half onto the other. Cook for about a minute and flip to the other side. Allow it to cook for another minute and plate.

Add another tbsp of butter to the same pan. Pour in the second egg mixture and repeat the above process.

After you have flipped the egg and tortilla, add on the ham, cheese, tomato, and spinach. Fold one half towards the other once again. Cook for a minute and flip to the other side.

Serve and enjoy your easy breakfast quesadillas.

I use old sharp cheddar cheese, but feel free to use the cheese of your choice. The same applies to the process cheese slices.
I use chorizo sausage. Feel free to use the sausage of your choice. I know spicy Italian sausage suits the recipe well.
