I first had this cheese burst toast sandwich when I lived in South Korea. The recipe is actually Korean street food. When I first ordered it and saw the corn, I was sceptical. Once I had a taste, however, I was sold. The corn was sweet, the cheese oozed out, and the bread was toasted to perfection. The sandwich was perfectly seasoned too. If that’s possible with a sandwich.
Of course, I came home and attempted to reproduce it. After doing a few alterations, it turned out to be a success. I have eaten this ever since.
Easy Cheesy Burst Toast Sandwich
Cheesy burst toast is make with a combination of bread, sweet corn, mayo, bacon, mozzarella cheese, and seasoning. The outcome is a snack to die for.
In a mixing bowl, combine the corn, mayo, cheese, bacon, onion, pepper, garlic, and parsley flakes. Mix until well combined.
Lay four pieces of bread out and cut a rectangle from the centre of each piece being carful not to come too close to the edges.
Lay four more pieces of bread out. Do not cut them. Place a piece of processed cheese onto them and a generous layer of mozzarella.
Place the first cut out piece of bread onto the second and fill the well with the mixture. About 2 heaping tablespoons will suffice. Then, add another generous layer of mozzarella over it.
Place the toast on a baking tray and put into a 370 degree F or 185 C preheated oven for 15 minutes.
Garnish with some parsley flakes, serve, and enjoy your cheesy burst toasts
