The Perfect Pumpkin Omelette

As Hallowe’en and Thanksgiving approach, we always have left over pumpkin of some sort and wonder what to do with it. You can, of course, make pies, but I decided to go an extra step and make a pumpkin omelette. Believe me, it was well worth the effort. It was a type of omelette I have never tasted before. The taste of fresh pumpkin just comes through so nicely you will want seconds and share it with your family and friends.

The great thing is you can make the pumpkin omelette in about 20 minutes and it involves minimal effort and ingredients. Just add some eggs, pumpkin, green onions, milk, salt, pepper, and garlic and you have one of the nicest omelettes you have ever had. Of course you can add extra ingredients if you wish.

Pumpkin Omelette

Ingredients
  • 4 large eggs
  • 1 1/2 cups of fresh pumpkin cut into strips
  • 3 green onions cut into 2 inch strips, about 1 cup
  • 1 tbsp of milk
  • 1/2 tsp of garlic powder
  • 1/2 tsp of salt
  • 1/2 tsp of pepper
  • oil for cooking
  • ketchup of soy sauce for dipping
Instructions
  1. Crack the eggs into a bowl and whisk. Add in the milk, garlic powder, salt, and pepper. Whisk once again.
  2. Add in the pumpkin and green onion and mix until well combined.
  3. Place some oil in a pan over medium – low heat and pour the egg mixture in.
  4. Cook until the egg is set and browned on one side.
  5. Place a plate over the top and flip it. Return it to the pan and cook until set on the other side. Each side will take about 5 minutes.
  6. Serve with dipping sauce and enjoy your pumpkin omelette.
