  1. Place the ribs in a large pot and pour the water over. There should be enough water to cover the ribs. Add in the ginger, bay leaves, green onion, star anise, hot pepper, and pepper corn. Bring to a boil and cook for 10 minutes. Skim any residue off the top while boiling. Drain, strain, and rinse. Set the ribs aside in a bowl.Β 

    You can discard the aromatics or make soup from them.
  2. While the ribs are boiling, make the sauce by combining the vinegar, dark soy sauce, and 1 tbsp of sugar in a small bowl. Mix until well combined.Β 

  3. Add the vegetable oil to a pan and distribute it evenly. Evenly spread the sugar over the oil. Use a spoon or spatula if necessary. Make sure the heat is turned off.Β 

  4. Once you have an even distribution of oil and sugar, turn the stove on to medium heat and stir the sugar into the oil gently until melted or dissolved. It's important not to let the sugar caramelize.Β 

  5. Add the ribs to the pan. Stir and cook until browned and braised. They should start to turn a beautiful golden brown in a minute or so. Fry and toss until cooked though and your desired color is reached.Β 

  6. Set the ribs aside in a bowl and clean out the pan with a paper towel. Add in the garlic. Stir and saute for 2 or 3 minutes until slightly browned and fragrant.Β 

  7. Pour the sauce in and stir. Add the ribs back in and toss until completely coated with the sauce. Fry and toss for a few minutes until the sauce is hot.Β 

  8. Serve with rice, fries, or your favorite side dish. Enjoy your sweet and sour ribs.Β
