Place the ribs in a large pot and pour the water over. There should be enough water to cover the ribs. Add in the ginger, bay leaves, green onion, star anise, hot pepper, and pepper corn. Bring to a boil and cook for 10 minutes. Skim any residue off the top while boiling. Drain, strain, and rinse. Set the ribs aside in a bowl.Β
You can discard the aromatics or make soup from them. -
While the ribs are boiling, make the sauce by combining the vinegar, dark soy sauce, and 1 tbsp of sugar in a small bowl. Mix until well combined.Β

Add the vegetable oil to a pan and distribute it evenly. Evenly spread the sugar over the oil. Use a spoon or spatula if necessary. Make sure the heat is turned off.Β
